Fenugreek
The secret depth of every curry. Warm, nutty, and delicately bitter, essential in Middle Eastern and Indian cuisine.

Why fenugreek belongs in your kitchen
Fenugreek tastes nutty and slightly bitter, with an aroma close to maple syrup and curry. In Germany you know it from Bockshornklee cheese and the spiced breads of the Alps. In India and the Middle East it is the backbone of every curry.
The quiet depth behind every good curry
Toast a pinch in hot oil before the onions go in. The bitterness fades and the maple aroma stays.
The German side of fenugreek
Bockshornklee cheese from the north, spiced flatbreads from South Tyrol and the Allgäu. Ground fenugreek is what gives both their quiet, nutty depth.
The history of fenugreek
Fenugreek is one of the oldest cultivated plants we know. Seeds were found in the tomb of Tutankhamun, the Greeks and Romans grew it as fodder, and its Latin name, foenum-graecum, means Greek hay. Charlemagne had it planted in his gardens, which is how it reached German monasteries, cheese cellars and bakeries. Further east it became a staple of Indian, Persian and Ethiopian cooking.
