The queen of spices

Why a pinch of cardamom goes so far

Green cardamom is the dried fruit of a plant from the Indian hills, and inside each pod sit a dozen small black seeds. Ground, it is sweet, citrusy and resinous, one of the most intense aromas in the spice rack. That intensity is why a small amount is all a dish ever needs.

A pinch is enough

A quarter teaspoon flavours a whole pot of rice or a batch of dough. Used with a light hand, one pouch lasts a long time.

02

Chai, coffee, rice, pastry

The spice behind masala chai and Arabic coffee, and in rice dishes, curries, pastries and desserts.

03

A classic in many kitchens

Cardamom is valued in Middle Eastern, Indian and Scandinavian cooking, from coffee and bread to rice and desserts.

Chai the way it is meant to taste

Black tea, milk, cardamom, cinnamon, ginger and a little sugar. Simmered, not steeped.

The baking spice of the north

Scandinavia bakes with cardamom the way Germany bakes with cinnamon: in buns, braids and Christmas bread. It is also in every German Lebkuchengewürz and in Spekulatius. For a sweet dough, half a teaspoon of ground cardamom per 500 g of flour is where to start.

From the hills of India

The history of cardamom

Cardamom grows wild in the Western Ghats of southern India, where it was gathered long before it was farmed. Arab traders carried it to the Mediterranean, the Vikings brought it north to Scandinavia, and in the 20th century Guatemala became the largest grower in the world. It has always been one of the most expensive spices, which is why it is used in pinches.
