The true cinnamon

Why Ceylon cinnamon tastes so soft

Ceylon cinnamon is the inner bark of a tree native to Sri Lanka, rolled into thin, layered quills and ground fine. It is milder and sweeter than the thick Cassia bark most supermarkets sell, with a flavour that stays delicate even when you use it every day.

01

Ceylon, not Cassia

Ceylon cinnamon is naturally low in coumarin, the compound Cassia cinnamon carries in much higher amounts. It is the cinnamon for daily use.

02

Finer and sweeter than cassia

Ceylon cinnamon is naturally low in coumarin and has a finer, sweeter note than cassia. Ideal for baking, porridge, chai and oriental dishes.

03

For baking and hot drinks

Milchreis, porridge, Apfelstrudel, Zimtschnecken, chai and coffee. Ceylon cinnamon is sweet enough to need less sugar.

The question before you buy

Ceylon or Cassia?

Most cinnamon in German supermarkets is Cassia: thick, dark, strong, and high in coumarin, which the German Federal Institute for Risk Assessment advises against in larger daily amounts. Ceylon cinnamon is the thin, pale, layered kind. It is naturally low in coumarin, milder in taste, and the one you can bake with all winter without thinking about it.

The German baking calendar runs on cinnamon from October to Christmas. One pouch sees you through all of it.

The history of cinnamon

Cinnamon is the inner bark of a tree native to Sri Lanka, peeled by hand and left to curl as it dries. The Portuguese took the island for it in the 16th century, the Dutch took it from them, and for two hundred years the price of cinnamon in Europe was set in Colombo. The peeling is still done by hand today.
