Warm, earthy, nutty

The backbone of chili, hummus and falafel

Cumin is the ground seed of a small plant from the eastern Mediterranean, and its warm, earthy taste is the base note of three great kitchens: Mexican, Middle Eastern and Indian. If a dish tastes of curry, chili or falafel, cumin is usually why.

01

Kreuzkümmel is not Kümmel

Cumin (Kreuzkümmel) and caraway (Kümmel) look alike and are not related in taste. Cumin is warm and earthy, caraway is the sharper seed in rye bread. Our pouch is cumin.

02

Toast it first

A minute in a dry pan or in the hot oil before the onions go in wakes the aroma up. Ground cumin needs only a few seconds.

03

Essential in three kitchens

Cumin is an essential spice in Middle Eastern, Indian and Mexican cooking, from chili and hummus to falafel and spiced rice.

Three kitchens, one spice

Where cumin travels

In Mexico it is in chili con carne, tacos and refried beans. In the Middle East it goes into falafel, couscous and roasted lamb. In India it opens almost every curry, fried whole in hot oil before anything else goes in. Same spice, three accents.

The history of cumin

Cumin was grown in Egypt and the eastern Mediterranean in antiquity, it is mentioned in the Bible, and the Romans used it on the table the way we use pepper. From there it travelled east to India and, with the Spanish, west to Mexico. Today it is one of the most used spices in the world.
